A wine of the prestigious “Il Pumo” line of the San Marzano winery, and it has the DOP certification. It is made by a blend of 85% Negroamaro grapes and 15% of Malvasia Nera di Brindisi. The grape harvest takes place at the half of September and it follows the thermos-controlled maceration for 10 days and the alcoholic fermentation with selected yeasts. The refinement takes place in stainless steel. This wine can be aged up to 5 years without modifying the organoleptic characteristics.
