Sireni and Ararati are unique Armenian grapes. Sireni, a red from Artsakh, ripens mid-season and handles dry conditions well. Ararati, a white from Vayots Dzor, ripens late and resists diseases.
Winemakers ferment each type separately in special underground clay pots called karasses. The white Ararati gets skin contact. Then, they mix the wines and age them for about two years in clay pots and plain concrete tanks, followed by a year in bottles.
